The seafood industry produces 10 million tons of waste each year. What would happen if that could be put to use in new products and innovations? That question is a big part of the driving force behind Iceland Ocean Cluster, a network of 70 companies within the icelandic blue economy. Thor Sigfusson is founder and chairman of the cluster, and Heja Framtiden met him at the Spot on Food conference in Kristianstad to discuss the icelandic success story, as well as Sigfusson’s book and philosophy called 100% Fish.
